4. Yummy Cake Recipe for Diabetics

This is a layered cake I make my husband on his birthday, which is today and I just ate two pieces! You’re probably saying to yourself, “Yes, Carolyn, but you’d eat two pieces of ANY birthday cake.” True, but this one is guilt-free and it doesn’t make John, who was diagnosed with Type 1 diabetes 28 years ago, feel like he’s being deprived.  We could easily order a regular birthday cake, but this one doesn’t force him to take an unusual amount of insulin and he doesn’t get a sugar rebound.

Here’s exactly what I did, but you can experiment with the flavors your family likes. The carb count on the Angel Food Cake is 11 grams per serving.

INGREDIENTS

  • 2 boxes vanilla or banana-flavored sugar-free, fat-free Instant Jell-O pudding. (1 oz box)

  • 2 boxes strawberry sugar-free Instant Jell-O. (0.30 oz box)

  • 1 Sugar-free Angel Food Cake loaf made by Hill & Valley. (7 oz. Got mine at Jewell)

  • 1 container of Cool Whip reduced sugar

  • 1 banana

Make the strawberry Jell-O and pour it into an 8 x 8 baking dish. Slice banana and add to Jell-O. (I only used about 3/4ths of the Jell-O.)

Chill it just until it starts to gel. Slice the Angel Food Cake loaf length-wise so you have two retangular pieces. Remove Jell-O from the fridge, and press the pieces of cake into the Jell-O to make the second layer of the cake. The cake shouldn’t be completely immersed in the Jell-O. Return to the fridge and let it chill for about a half hour more. Make the pudding, and spread it on top of the cake for your third layer. Cover the entire cake with Cool Whip for the fourth layer.

So, weeks ago, entling no. 1 started to alert me and her sister to the newly released pics from New Moon--the movie but she stopped as she remembered, "oh, snap, they don't care."

It is really so sad, a house divided. Twilight fans/Not Twilight fans. (entling no. 2 has not weighed in, yet.)

entling no. 3 and I rejoice in the success, fandom and enthusiasm for the Twilight books. I adore them for their contribution to my "it is never too late to become a reader" mantra.

entling no. 3 actually liked the movie and uttered the equivalent of heresy in this house, "I think I will just see the movies and not read the books." Alas.

We tried, REALLY tried to be part of the party BUT it turned out that both of us got to the "sparkle in the forest clearing" part and had to stop reading. I did eventually finish the book but the entling couldn't push her eyeballs one page further.

From unscientific data, gleaned from random conversations, it would appear that, the "sparkle" scene is a make-or-break point for readers. If you sail through that scene you will be a Twilight fan. If not, not.

Reading Meg Cabot's arch take on Publix birthday cakes and her ponders about Twilight cakes sent me a-googling.

6. Cakes Inspired by Children's Books

Cake Wrecks currently tops my list of humor blogs. If I am ever lacking a smile, I know I can find one over there. While six days a week the blog focuses on decorating disasters of various flavors, Sundays are reserved for truly beautiful, amazing cakes.

This Sunday, the theme is cakes inspired by children's books. The Very Hungry Caterpillar, Where the Wild Things Are, Good Night, Moon... My favorite, however, is this one inspired by The Poky Little Puppy:

Yes, I'd like that sweet little puppy to go roly-poly, pell-mell, tumble-bumble into my mouth, please... when I'm finished admiring all the clever details.

My own mother was quite the cake decorator back in the day, and my first two birthday cakes were both inspired by children's books, too. I don't seem to have a photo of the Jemima Puddle-Duck cake, but here's Raggedy Ann and me on my first birthday:

7. More Bday Monsters

It's a tradition at the house to have a Very Special Cake for each of the boys' birthdays ever since their very first bd. Even if we had no Party at all and only sang 'Happy BD' the special cake couldn't be missed.

So... here are the sketches, illos and pics for the BD Party # 5 of my oldest. BD was last February and since then have had no time to post. Until now.

As I always do, I started designing the characters for the invitation. Then I laid out the card and continued with the design of cake. Christy from Vanlatte Custom Cakes in Mesa helped me again.

PLUG - If you ever need a baker that absolutely rocks in the Valley, you have to call her. She also helped me sculpting the cake # 3 for my youngest that I posted a year or so back. You can see those posts here and here.

8. The Very Best Cake


This sketch is a preliminary study for something I am working on. The finished illustration will be a bit different, but I posted this just to say that it made me so hungry I have to go bake a cake.

I have been watching the FOOD network challenges and the cake challenges are the most amazing!

10. ILLUSTRATION FRIDAY ~ SUGARY-( the Pettifour-Pinafore )


Ameila and her grandma spent the whole morning creating sugary pettifours. They were having a lot of company for a special luncheon.

     " I wish I could eat just one or maybe two and then serve our guests, 
 because if we serve them all, they look so good that there won't be any left."
     "I know, and that's too sad isn't it." said grandma. 
      Ameilia thought for a while.
     "I know, we can share them! But, before we do I must have just one!"
     Amelia's grandma smiled and  let her choose the perfect one and then she said,
"I have an idea Amelia. Let's paint some designs on your pinafore. Then you will always have a SUGARY reminder of what we baked today."
    " A delicious idea!" exclaimed the child, and together Ameilia and her grandmother painted delightful designs on her pinafore.
  " What a nice way to remember this day!" grandma hugged Amelia and they carried the tray of sugary delights into the dining room to wiat for their guests.

14. Change of plans



As a freelancer it's not uncommon for my clients to have "A change of plans."
This image was one of a set of 6 created for a collection of pet treat boxes. 3 for cat treats and 3 for dog treats. They were to be round like hat boxes. This is my favorite one of the cats. It's for the top of the lid.

The client changed their plans and went with a different format altogether.
