Samples came the other day, of the fun Mother’s Day illustration I worked on for a back-page puzzle for Clubhouse Jr. magazine I had a lot of fun with this. I worked in a bit of a tighter style using a very thin line. I’m really pleased with how the final printed piece turned out. And the raccoons still make me smile! Below are some photos of the final art.

I threw this together the other night when I needed something pretty quick and had to use what I had on hand. It was a perfect easy supper.
It’s inspired by Rachael Ray’s Calabacitas Casserole, which is yummy but more involved, with no beans. I once had it at my sister-in-law’s house, and was immediately sold.
My casserole is based on three main ingredients: black beans, salsa, and pre-cooked polenta. Anything else is icing on the cake.
Quick Black Bean and Polenta Casserole
Measurements are approximated. What you want is enough salsa to give the beans plenty of flavor.
2-3 cups canned or pre-cooked black beans, drained (I used up leftovers I had cooked the day before)
1/2 to 1 jar chunky salsa (I used Herdez salsa, which was great, but would’ve been better semi-drained. I think semi-drained Ro-tel would also be excellent, and maybe even Mexican-style stewed tomatoes)
1 tube prepared polenta, sliced into 1/3 inch rounds (you could also cook your own, then chill and slice)
Olive oil
Optional add-ins: diced scallions, cilantro, chopped veggies, spinach, cheese
Preheat oven to 375 F. I made a smaller version of this (since it was just for me) and cooked it in the toaster oven.
Place the beans in an oiled casserole dish (maybe 8 x 8), and add enough salsa to suit your taste. You want a little less salsa than beans, but enough salsa to add lots of flavor. Lay the polenta rounds on top and brush them with a little olive oil.
Bake for 35 minutes or so at 375 F, then add, if you feel like it, a handful of spinach and chopped scallions, and turn up the heat to 400 F. When the spinach is wilted, the polenta is getting crispy, and the beans are bubbling, it’s done.
The polenta adds structure and has such a great creamy/ crispy texture that I really didn’t miss having cheese. This one will definitely go on my repeat list. I think I’ll add more spinach next time and maybe cilantro. Hmmm…what about sweet potato?

You may think I’m a vegetarian from all my veggie posts, but I DO eat meat. Just not a lot of it. More on that here.
We love burgers around here, but I’m always trying to get my people to eat ones that don’t involve red meat. The turkey ones always seem to need a bit of doctoring, in my experience. I love the Mar-a-Lago burgers championed by Oprah, but really, they’re just too much work for a weeknight and the flavors, while delicious, don’t really go with our favorite toppings (like ketchup and pickles).
These are a good compromise, and, with a few recent tweaks, they’ve entered into that rare realm which is the full-family-seal-of-approval. Like, all four members. I’m probably jinxing that status just by typing this, but I’m willing to risk it, just for you.
My recipe is adapted from this one.
Favorite Turkey Burgers
1/2 cup rolled oats*
1 1/2 pounds ground turkey (I use breast meat)*
3 TB mayonnaise
1/4 to 1/2 cup chopped onion (the finer the better, in order to trick the kids)
1 TB Worcestershire sauce
dash of hot sauce
good sprinkling of sweet paprika
a judicious amount of ground pepper
1. If your turkey meat is fairly dry, moisten the oats with about a tablespoon of water and let rest for a minute or two. If the meat has a fair amount of water content already, skip this step.
2. Combine with other ingredients. I hate doing this with my hands so I use two big spoons. Mix just enough to get it well-combined and make into patties.
3. You can grill these, but I find it’s actually a lot easier to cook them in my cast iron pan on the stove. They fall apart easily on the grill. I cook them at medium low for several minutes on each side to make sure they’re all the way done. This way the outsides don’t burn. Check to make sure there’s no pink.
4. Add toppings and enjoy!
*So, like many turkey burger recipes, the mother recipe called for bread crumbs. Since I’m not eating wheat, I could use GF bread crumbs, but I decided instead to try oatmeal. Bingo! Totally works and in fact is an improvement in my book.
*Last night I discovered I had a pound of turkey, not a pound and a half. The whole mixture was gooey (ew!) so I added a second half cup of oatmeal. I was a little nervous about the gamble, but they turned out great, with no comments from the peanut gallery. And as a bonus, they used less meat.
One question I have for you—-all turkey burger recipes seem to have something like mayo in them for, I guess, texture and flavor. Do you think the mayo nixes the health benefits of changing to turkey meat? Do you think I could skip it?
And one more question: anybody have a fantastic gluten-free vegan burger recipe? I know, sounds like a tall order, but I’m totally convinced there’s one out there. So far I haven’t done any trials, but let me know if you’re ahead of me.

Well here is the post with the pictures of books that I snagged at BEA. I have a few duplicates that I will be giving away within the next couple of weeks. Right now I have The Darkest Minds contest going on so make sure to enter that. The next contest going up will be Magisterium by Jeff Hirsch who wrote The Eleventh Plague. It's not signed. If I grabbed a book, I generally didn't stand on line for signings, because you get another book and well, carrying said books gets really heavy. I did bring a suitcase and checked it in so I could dump books when it became the shoulder bags became so heavy.
One thing about this year at BEA was the amount of finished copies I received. Usually the pubs just give away ARCs or bound galleys, but as you can see from the far left column of books, I have seven finished copies. Yeah, they're very heavy.
Um, yeah, these stacks are crazy. As you can tell I cut off the top not willingly, but because I just couldn't get the stacks all in one picture! The far right column of books are the giveaway books. Hubby actually came up with a good idea and said I should've created a list of books that I grabbed and crossed it off so I wouldn't end up with duplicates. But in all honesty, it's easy to forget what book you took and what you thought you took. Hence, the ending up with duplicates or even triplicates! (Which kinda sucks because, yeah, I have to carry them!)
Here's a better picture of the stacks. Some of my favorite books that I got are Fallen Kingdoms, The Farm, Shadows, Crewel, Throne of Glass, For Darkness Shows the Stars, The Darkest Minds, Altered, Eve & Adam. I made sure to pick out some books for my 8 yo as well. They had so many middle grade books just for the taking that I really couldn't pass that up. To see her face when I brought them home was priceless. I also picked her up a HUGE Reeses Peanut Butter Cup from the Hershey Store. ONE POUND of chocolate peanut butter goodness. When I say that it is huge, I am not lying!
BEA was a blast and I had so much fun meeting up with bloggers that I tweet with and having people recognize my blog was just incredibly humbling. I was invited to so many after parties or breakfasts. I would really have to say meeting my publishing contacts was really awesome. Putting a face to a name really makes them more human and not just an e-mail. I was so excited to meet my Little Brown contact at the SoHo Press party and when she told me she knew my blog and she worked for LB, I knew exactly who she was. I had a great time meeting her roommate and her neighbor, who I've been told is a fantastic cook (I've already invited myself over for dinner! :-p).

People ask why this blog doesn't have comments enabled, and it goes back to how old it is. When I started blogging, blogger didn't do comments. And by the time it did, well, I liked it just how it was, and had no desire to change anything. Over on Facebook, there are comments, so I got to see something close to a flame war break out over whether, when I had posted a photo of me with an endangered Tasmanian Land Crayfish, I had meant "crawfish" or not. (I should have just said "Yabby.")
Sometimes I think that when I die, or perhaps as I am dying, I shall be confronted with my characters.
I mentioned on Twitter that I'd made a Sweet Potato/Tamarind/Tofu/Polenta casserole and that Maddy has astonished me by liking it, and Wil Wheaton promptly asked for the recipe. Which is much too long for Twitter:
What I like doing with recipes most is ignoring them. Or at least, going "Well, yes. Although I don't have any of those things. But I do have something a bit like it..."
The idea came from a recipe in Isa Chandra Moskowitz's Appetite For Reduction. (Incidentally, I'm now comfortably wearing long-forgotten jeans from the size 31 tub, and do not plan to lose much more weight, because there are only two pairs of jeans in the 30 tub.)

I've needed to practice drawing characters and faces as they're a huge weakness where my overall drawing is concerned, so when I received a special request to draw some for a Mystery Murder project (more on that later!), I jumped at the chance. I'm a huge fan of detective, criminal investigation and murder mystery stories anyway, whether on paper or on the screen, so this was tons of fun to do!
So here's the first one, the Mob Boss. Once I'd scanned it in I felt it was a bit too light and perhaps had too delicate a touch for the subject matter, so I played with levels and contrast on photoshop and this was my final result:
Better, I think ... off to work on the next character now :)

Tonight I made Pad Thai for dinner. A few months ago my friend Sunaree who is Thai and her husband had my husband and I over for dinner and she cooked Pad Thai for us. I have to tell you it was the most amazing and delicious experience. I didn't take a photo of dinner as it was the first time we had dinner together and I thought it would be rude. The food was incredible and the presentation so colorful. Her husband loves her cooking too and is her perfect match.
Yesterday Sunaree brought me some rice noodles and I tried my first hand at it. I bought a sauce mix ( I know, not very original) however I am going to try making the sauce on my own when I have more time. I only have about an hour in the evening during the week so cooking quickly is often a must. My husband and I had seconds and we'll both have some left over for work tomorrow. Yum!
This is the closest photo to what Sunaree served us for dinner that night (an exceptional photo of Pad Thai I might add!). Pim used a few different ingredients than Sunaree did and I used a packet of sauce picked up at the store which my husband and I both found quite good. I also substituted the shrimp for chicken and left out the egg as we are watching our cholesterol which is a good thing but fresh shrimp with this meal is incredible. I'll save the times to have it with shrimp when Sunaree is doing the cooking. Visually, hers looks so much more vibrant.
I can't say enough about Sunaree, she is an amazing cook and so sweet too, I can't wait until she cooks for us again. After all, why have a copy when you can have the real thing! :)

I grew up during the Depression. Money was very scarce. Grits were cheap and filling, so most breakfasts consisted of bacon, eggs, grits and gravy (made for bacon drippings and delicious), toast and coffee. Occasionally, what the Italians call polenta was substituted for grits. We called it corn meal mush. It was also cheap and filling.
