...Josh and I have mourned the demise of the Late Night Jalapeno Popper Doritos. They were super-chemical-y, true, but they were also strangely addictive, and we've never found another Special Edition Dorito that compares.
AND BELIEVE ME, WE'VE TRIED.
Today, though, we discovered Late July's Mild Green Mojo chips.
THEY. ARE. AWESOME.
They aren't at all chemical-y, and the flavor is more subtle than the Doritos (I mean, DUH, that's kind of a low bar), and the texture is SO NICE because in addition to being all multigrain-y, there's also some chia seeds and other good stuff crammed in there... anyway, we polished off the entire bag on the way home from the grocery store, and every couple of minutes, one of us would turn to the other and say, "THESE ARE REALLY GOOD."
Seriously, for the entire twenty minute drive home, we pretty much only uttered variations of that sentence.
But just in case you're thinking we've suddenly gotten all classy or something, we also brought home a bag of the Lays Chicken & Waffles chips, too.
PS. NO, I DID NOT GET PAID TO WRITE THIS. I just really liked the chips A LOT.

Crisp Salted Oatmeal White Chocolate Cookies.
I only had white chocolate chips in the house -- the horror! -- so I used them instead of fancy good chocolate. But as Josh hasn't stopped eating them since I took 'em out of the oven, I haven't heard any complaints.
This is also excellent*, though I suspect I'll be the only one to eat it, since SOMEONE "refuses to eat things with tails". (I've never seen him turn down shrimp, but whatever. More for me.)
I always eat so much better on days off.
And by better, I mean More Deliciously.

*I used cheddar, though, and more than doubled it. And asiago instead of the parmesan, since that's what was in the fridge.

Note Chocolatesuze's use of parchment paper squares in lieu of muffin cups -- I did it, AND I'M NEVER GOING BACK. Because they're awesome. No more losing bits of muffin/cupcake to the wrapper! Woo!

The Spinach-Rice Casserole from the original Moosewood Cookbook is AWESOMELY GOOD.
I made a few minor changes -- used olive oil instead of butter (didn't measure, though), and used two 10 oz. boxes of frozen spinach because that's what I had on hand -- but basically, I made it as written.
Also, I have two crockpots going -- one with a pot roast, and one with baked beans. Excessive, possibly, but we seem to be settling into winter quite cheerfully! (Supposedly, there might be snow tonight...!)

So. On Saturday, I baked ten loaves of peach¹ bread (ate one and froze the other nine). And then I baked a few loaves of zucchini bread. And froze some of that. And froze some green beans. And froze some grated zucchini in 3-cup containers for future baking. (Pretty much every zucchini bread recipe I've come across calls for two cups, but I've been packing an extra cup into everything with no problems.)
Yesterday.
I made chocolate zucchini bread, and my World Was Officially Rocked.
I tweaked this recipe in the following manner:

Yes, that is a Halloween kitchen towel. We have a disproportionate number of them, as we try to buy a few every year.

Apparently, this was announced back in June, but I missed it. I was probably (stupidly) planting zucchinis or something.
Zucchinis that I am (again, stupidly) not eating at the moment -- instead, I'm chowing down on some of the kale that my mother gave us this weekend. (We're eating it in the form of chips¹.)

¹I used this recipe with the following changes: I decreased the oil to 2 tablespoons, decreased the salt by at least half, added some sesame seeds and Cajun seasoning. And I baked 'em for 20 minutes, rather than 15. And now they're all gone. Dammit.
