Starting a new course can be daunting - particularly a new GNVQ. This textbook is designed to help students get through the course. It has been structured along the same lines as the finalised GNVQ Standards, so that they can be sure of covering all they need to know.


Throughout the book, we have put in tasks which can be done to check that students have understood what they have just read. In addition, there are assignments which they can use to build up portfolios of evidence. Core skills are integrated throughout the book. This series is the only one that has been specifically designed for the Hospitality & Catering GNVQ in time for the introduction of the new syllabus in 1994. The core skills recommended by the NCVQ are integrated and developed throughout the book. The Hospitality and Catering GNVQ Series has been written by the BTEC team who set the standards for GNVQ.
